Why this tour?
Bologna has been called La Grassa — "The Fat One" — for centuries. Its markets, trattorias and pastifici are some of the most extraordinary in the world. Most tourists never find them. We take you to the ones that matter.
The ritual starts with an aperitivo at a bar where locals gather after work. You'll taste regional wines and the snacks that Bolognese people actually choose — not a tourist-priced cocktail menu.
We sit down at a neighborhood trattoria for a plate of handmade sfoglia: tortellini in brodo, tagliatelle al ragù or gramigna — depending on the season and what the sfoglina made that morning.
Not all gelato is equal. We visit a gelateria that makes everything in-house with local ingredients — no artificial colours, no pre-packaged bases. The nocciola speaks for itself.
We close in a historic café where the baristas pull espresso the Bolognese way: standing at the counter, small cup, no rushing. The perfect ending to a perfect afternoon.
